Fort Lauderdale Marriott Harbor Beach Welcomes Two New Chefs To Culinary Team

Fort Lauderdale Marriott Harbor Beach Resort & Spa – situated on the largest stretch of privately owned beach in South Florida – proudly announces the appointment of Carlos Landeiro as the new Senior Sous Chef of 3030 Ocean Restaurant and Carissa DaSilva as the resort’s new Pastry Chef.

DaSilva’s passion to create amazing deserts is incomparable. She thrives in terms of creating new flavor combinations and using those flavors to build a new desert, so we’re very excited for the extra sweet experience she brings to the team.”

A native to South Florida, Carlos Landeiro was born and raised in Miami and has always enjoyed the science behind food and creating new experiences. Landeiro joins the team at Marriott Harbor Beach following a stint at the JW Marriott Marco Island Beach Resort, where he worked as a Specialty Lead Cook before climbing the ranks to Sous Chef. Prior to that, Chef Carlos resided in Chicago where he spent time as a Chef De Partie for the two-star Michelin Restaurant, Acadia. In his new role, he will wear the hat of Senior Sous Chef for Marriott Harbor Beach’s 3030 Ocean Restaurant, a casual and chic beachfront dinner bistro serving up a unique, creative and passionate combination of flavors spanning stylish American Cuisine, the freshest seafood and signature cocktails.

“I am excited to be joining the Harbor Beach Marriott family and to be able to create experiences for guest dining at 3030,” said Chef Landeiro. “Coming from JW Marco Island and Acadia in the South Loop of Chicago, I am really looking forward to using produce from nearby farms and some of the freshest seafood from right outside our windows.”

Entering the industry a bit differently, Carissa DaSilva’s career started from a simple hobby she enjoyed doing at home that grew into a small business, a little pastry shop called For the Love of Sweets. Since then, Carissa has worked in several professional kitchens in the South Florida area, the first being Artisan Beach House at the Ritz-Carlton in Bal Harbor where she worked alongside Paula DaSilva, a long-time South Florida Chef and previous “Hell’s Kitchen” contestant. Her next venture was to the Seminole Hard Rock Hotel and Casino in Hollywood, Fla. where she served as the Pastry Sous Chef. DaSilva then went on to work in the private club sector for a bit at the Lauderdale Yacht Club and Mizner Country Club, before making her way to Marriott Harbor Beach Resort & Spa.
