
Namron Hospitality Updates Food and Beverage Concepts Across Portfolio

MEXICO CITY — Namron Hospitality has introduced new restaurant concepts and menus across its hotel portfolio in Tulum and Mexico City.
In Tulum, NÜ at La Valise Tulum has introduced a reworked tasting menu rooted in Mexican ingredients and open-flame cooking. The restaurant was recognized by the Michelin Guide in 2024.
Namron also has added two concepts at other properties in Tulum. Climo, at Encantada, combines contemporary Mexican cuisine with Sicilian techniques, including handmade pastas, wood-fired pizzas and seafood. Izakaya, at XELA, is a dining and cocktail concept influenced by Japanese gathering traditions and Mexican coastal cuisine.
In Mexico City, Hotel Alexander has reintroduced its signature restaurant as Alexander Bar. Formerly known as the Caviar Bar, the restaurant now includes a broader cocktail and social bar format, with a reworked food and beverage menu led by Chef Ana Sophia Serrano. The hotel is in the Torre Virreyes de Chapultepec skyscraper in the Lomas Virreyes neighborhood.
Namron also has opened Lotti, the signature restaurant at El Cortés in Roma Norte, ahead of the hotel’s official opening. The restaurant is the first solo project from Swiss Chef Luc Liebster and serves contemporary European dishes, including chicken Cordon Bleu, braised lamb and Wagyu filet.
