Meet Hotel Forty Five’s New Executive Chef: Matt Schleis

The award-winning Hotel Forty Five has announced the appointment of Matt Schleis as its new executive chef. Previously serving as the sous chef since the boutique hotel’s inception, Schleis proudly assumes his new role to oversee all culinary operations for Loom, Hightales Rooftop Bar and Reckon Coffee & Wine Bar.
“Chef Matt has played an integral role in our culinary team from the day we opened our doors, so we are thrilled to announce his well-deserved promotion to executive chef,” said Stephan Amesoeder, general manager of Hotel Forty Five. “His wealth of experience, proven leadership skills and attention to detail will be instrumental in delivering a memorable and extraordinary dining experience to our guests.”
In addition to leading the culinary direction of the three dining concepts, Schleis will oversee the catering for over 2,000 square feet of indoor and outdoor meeting and event space framed by the picturesque atmosphere of downtown Macon. By capitalizing on his knowledge of both modern and classic techniques, Schleis provides unique flavor profiles that will continue to elevate the hotel’s offerings.
The Macon native boasts a rich culinary background that delivers impeccably executed, yet approachable dishes. He began his career in the industry at Tic Toc Room, an upscale dining concept in Macon, where he began developing his personal epicurean style with a focus on fresh, locally sourced ingredients. Schleis has since held the title of executive chef at Grits Cafe in Forsyth, Georgia and private dining chef Natalia’s in Macon, where he sharpened his leadership and operational skills. Throughout his tenure at elevated dining outlets, his affinity for the food and beverage industry remained constant, leading him to his career at Hotel Forty Five.
