Hilton Short Hills Relaunches The Dining Room, Sporting a Fresh New Contemporary Design

In celebration of its upcoming 25th anniversary, Hilton Short Hills today announced the reopening of its full-service signature restaurant, The Dining Room, featuring a spectacular contemporary design along with a new menu created by executive chef Richard Kennedy. The restaurant was a mainstay and popular dining spot with area residents for many years, and its legions of local fans will not be disappointed with its sophisticated new menu of what is being referred to as “casual fine dining.”
The 120-seat restaurant, designed by New York City-based Bill Rooney Studio, has been reinvented as a seasonably inspired all-day dining venue. Each design detail was meticulously thought out in order to execute the highest level of service. This fresh and bright space will cater to all occasions, whether casual, intimate, social or corporate.
The materials that shape the space are soothing tones of silver and taupe accented with russet leather chairs, rich woods, silky wall finishes, plush carpeting and silver leaf. Illuminated decorative easels, showcasing modern art, provide visual interest to the room. Creative culinary experiences are provided in a space where the glow of light is a central element to both the concept and mood. Reminiscent of sparkling champagne, the bespoke chandelier elements illuminate the space and paint the room with a cheerful light paired with the passage of the day.
“The reopening of The Dining Room marks the beginning of a new chapter in the history of the hotel,” stated Pablo Torres, general manager, Hilton Short Hills. “We preserved the restaurant’s name because local residents recall The Dining Room with fond memories. With the relaunch, we hope that past customers as well as new ones, will return to the restaurant for an experience that will be as memorable as years past. We feel that our creative and innovative new menu and elegant, yet casual approach to fine dining is in keeping with today’s times. The Dining Room enables our guests to be themselves in a sophisticated, yet relaxed setting.”
The Dining Room will feature New American cuisine incorporating Chef Kennedy’s personal culinary preferences and reflects a farm-to-table approach with ingredients, meats and produce from the area’s farms and markets. The restaurant will serve line-caught fish from the East Coast exclusively.
“As a nod to its proud heritage, we are reinventing The Dining Room – a true classic – and including selected menu items from the past redefined and prepared with a contemporary vision,” Kennedy said. “We are building upon the former restaurant’s solid reputation that resonated with local customers. By reinventing The Dining Room with a fresh redesign and culinary approach, we are creating new dishes such as salmon wrapped in brick dough but retaining signature items including our Classic Caesar salad served tableside.”
Signature dinner dishes will include chicken casserole consisting of pulled chicken, veloute and crispy bread pudding and flat iron steak au poivre with celeriac puree and rosemary honey. The dinner menu also offers New York kale with pancetta, ricotta salata, pine nuts and white balsamic dressing. “Small bites” for dinner includes gnudi with pancetta and sage and duck sausage with chickpeas, carrots and Brussels sprouts.
Lunch highlights include Mediterranean grilled flatbread, warm burrata to share, patty melt, BBQ pulled pork sandwich, mozzarella-stuffed meatballs with polenta and spicy tomato sauce and the PLT (pancetta, lettuce, tomato, avocado mayo) served on sourdough bread.
The Dining Room is open for breakfast and lunch seven days a week and dinner Mon.-Sat.
Breakfast is served Mon.-Fri. from 6:30 am -11 am, lunch from 11 am-2 pm; dinner from 5:30 pm-10:00 pm. On Saturday, breakfast is served from 7 am-12 pm; lunch from noon-2 pm; dinner is served from 5:30 pm-10 pm.
On Sunday, the restaurant offers a breakfast buffet with omelet station and an a la carte brunch menu from 7 am-2 pm. The Dining Room is closed for dinner on Sunday.
