Sheraton Kona Resort & Spa at Keauhou Bay on Hawaii, the Big Island has introduced a new menu at the resort's signature restaurant, Rays on the Bay. The new menu is reflective of chef de cuisine Jayson Malla's eclectic style of cooking while playing homage to Hawaii Island's abundance of fresh foods and the resort's imu pit (a large covered cooking pit using heated stones), for surprising weekly slow-cooked menu specials.
"We couldn't wait to introduce this exciting new menu to Rays on the Bay patrons," said Sheraton Kona Food and Beverage Director Kahau Manzo. "Chef Malla has such a creative side to his cooking and guests already love the new food selections."

yellowfin tuna, avocado, sour cream, namasu, pickled jalapeno, tobiko and kabayaki sauce. Fun Keahole Lobster Pops are finished with a tangy mango glaze, and a Rays Pupu Platter of Ahi Puffs, Dynabites and Spring Rolls provides an explosion of flavors to accompany any one of Rays' tasty cocktails from the expansive rum bar.The bar menu also features a Hamakua Funghi or Crispy Pork Belly flat bread or a Rays Big Island Beef Burger.
Salads served at the bar and in the main dining area celebrate the freshness of the island with ingredients including Kamuela heirloom tomatoes, Pohole fern shoots and Kekela Farms greens.
Rays on the Bay entrees continue to be headlined by fish fresh caught along the Kona coast. Diners will have the difficult decision however of choosing from new items including Aunty Lily's Coffee Spiced Beef Tenderloin, Miso Glazed Eggplant, or the Lawaia (Fisherman's) Hot Pot with crab, mussels, clams, scallops, prawns, and fresh fish with baby bok choy in a lemograss ginger broth.

they exit the time-honored inferno moist, tender and infused with smoky-rich flavors. Finding its way to specials at Rays on the Bay could be Imu Braised Oxtail smoked with lemongrass and ginger and served with honey glazed taro. Or, Muscovy duck, slow cooked kalua-style in the imu, charred and presented on flat bread.
A gluten-free menu lists those items available from the Rays on the Bay kitchen for those who wish to dine without gluten concerns.
A favorite dessert, warm macadamia and white chocolate cookie topped with buttermilk ice cream, remains in high demand on the menu. But once again, diners may find it difficult to select among new additions including lilikoi (passion fruit) ice cream, Punaluu Sweetbread Pudding with Kona Gold mango and white chocolate haupia sauce, or a lilikoi cheesecake and chocolate banana tart with black pepper caramel and Kona coffee cream.
"Chef Malla's goal is to have the food match the restaurant's amazing ocean views so that one fully complements the other," Manzo said. "I think guests will find that his new menu accomplishes just that."
Rays on the Bay is open seven nights each week; bar service 5pm until 10:30pm, dinner service 5:30pm until 9:45pm and happy hour from 9pm until 10:30pm. Rays features live local entertainment each evening.
