Capella Telluride Taps Local Brewmaster To Concoct Custom Beers

Beer connoisseurs have four new reasons to raise a glass at Capella Telluride. The hotel, perched high above the town of Telluride in Colorado’s Mountain Village, has introduced four brews crafted exclusively for its fine dining restaurant, Onyx, and the stylish Suede Bar, providing patrons with a one-of-a-kind treat for the palate. Created by brewmaster Chris Fish of Telluride’s Smuggler’s Brewery, the new custom “Constellation” beers – inspired by Capella, the brightest star in the Auriga constellation – feature local ingredients and pair beautifully with resort menu items. They range from an espresso-infused porter to a therapeutic spa brew that just might be the world’s only green tea-based cider. Capella Telluride’s Executive Chef Gabriel Kolofon offers his menu suggestions to pair with the four beers:

Constellation Ale: An American-style pale ale featuring citrus and grapefruit notes, generously hopped with Constellation, Chinooks and Cascades from Washington’s Yakima Valley. Recommended with: Classic BLT
Constellation Brown Ale: Subtle spice notes of star anise, pink peppercorns and bay leaves transcend the typical brown ale in this American-style brew. Recommended with: Fried Micro Brew Tempura Fish with Chili French Fries and Vinegar Sauce

Constellation Spa Treatment: An original, hops-free blend of cider and ale brewed with organic apples and cider from Colorado’s own Talbott Farms. It features chamomile, lemongrass and two green teas – jasmine and Chinese. Recommended with: Smalls Crab Cakes served with a Creamy Mustard Truffle Salsa and Herbs Jicama Salad

Constellation Solar Eclipse: A midnight-dark, robust porter infused with Italian roast espresso from Conscious Coffees of Boulder, Colorado. Recommended with: Constellation Solar Eclipse Float served with Ginger Snap Cookie and Kahlua Ice Cream Sandwich
